My household wants me to always make
Oatmeal Raisin Cookies
and even though they are super easy
and Bandit our Macaw loves them.
I wanted to make something different this Monday morning.
This recipe is from a Gooseberry patch book
and the cookies had a different name.
They are buttery, very soft and yummy.
Coconut Sugar Cookies
1 & 1/2 cups butter, 3 sticks
1 & 1/2 cups sugar
1 cup flaked coconut
1 tsp. vanilla extract
3 cups flour
1 tsp. baking powder
1/2 tsp. salt
Mix by hand (do not use a mixer)
softened butter, sugar, coconut, vanilla & egg.
Stir in dry ingredients.
Roll into balls (little smaller than a walnut)
and place on ungreased cookie sheet.
Flatten balls with a glass dipped in sugar.
Bake at 350 degrees for 10 minutes.
