Carmel Corn

We make this every year for Halloween! :-)
I know the recipe by heart.

Start with 10 cups popped popcorn 
(I am always over the 10 cups rule, LOL!)
Please don't use air popped or microwave,
the best is good ol' fashioned kind
that you pop on the stove in a large pan
with oil.
This year we bought a disposable pan
(see pic below)
because our roaster wasn't cutting it
and we made a mess in the oven last year!

The carmel:
In a medium saucepan
you are going to heat to boiling,
while stirring:
2 sticks of butter
2 cups of dark brown sugar
1/2 cup dark karo syrup
(light will work too)
Boil for 5 minutes
and don't ever stop stirring!!!
Remove from heat and add:
 1/2 tsp baking soda
& 1 Tbs of butter

Immediately pour onto popcorn and stir!!!
Act fast!
Then "pop" your pan in the oven at 225 degrees for 1 hour.
Stir your popcorn every 15 minutes. 

Pour out on wax paper,
allow to cool.
Break apart and eat or store. :-)

Time with my kids ♥

It is such a joy to have your child be your friend when they are an adult. My daughter and I try and get together each week on her day off for food, movies and/or shopping. And then if my "son" can get the day off too, what a treat! We have a wonderful time together catching up. I love the time we get to spend together. It's invaluable to me.
