German Cottage Cheese Kuchen Pie

I can't even tell you how much I love, love, love this pie!
I first had it at church by a wonderful woman named Andrea.
She is an excellent cook!
I was fortunate to have this pie 3 times now and she lovingly shared the recipe.
It taste like a sweet custardy quiche. The almond extract and golden raisins really make this pie.
Try it, tell me how you like it. :-)

Preheat oven to 425 degrees
PAM a 9" springform pan

1 cup flour
1/4 cup sugar
1/4 cup (or half a stick) of softened or melted butter
1 beaten egg
Combine and press into the bottom of the springform pan, set aside.

2 cups small curd LIGHT cottage cheese
1/2 cup sugar
2 eggs
1/3 cup golden raisins
2 Tbs. flour
2 Tbs. Melted butter
1/2 tsp. vanilla
1/4 tsp. almond extract
1/4 tsp. salt
Mix well and pour over unbaked crust in springform pan.
Sprinkle top with cinnamon

Bake for 10 minutes at 425
then turn down oven to 350 degrees and bake for 35 minutes

Cool, Fridge, Serve, Yum!!!!! (you can serve it warm, I just like my custard cold)

for the whole pie its 2,942
If you cut the pie in 8 slices its 368 for each slice.

I turned 47!

47 years old!
Ack! How can I possibly be that old?!?!?!
And how can my mother have a 47 year old daughter? hehe

The day before my birthday,
I got together with my "kids" at our favorite vegan chinese restaurant. The Bamboo Garden in Seattle on Roy street, just a block over from Key Arena.

I love it! It's just deep fried junk food goodness covered with sticky syrup! It's like having dessert throughout the whole meal! Yum!
Hubby and I were in Church attire, because it was a Sunday and we met everyone afterwards.
The upper left photo is my daughter and her boyfriend.
And the bottom right photo is me & my step sister Stacey.

I won't detail my gifts, but I am truly blessed to have these people in my life. They are gift enough just being there.

On my Birthday day . . .
We spent the day at the movies and then SEES chocolates, at the mall shopping and then to one of my most favorite restaurants. . .
Rainforest Cafe! Yum!!!! We shared nachos and a fish & shrimp dish and were waaaaay to full for dessert.
It was a wonderful day! :-)

However since Starbucks changed the bakery items, I don't want to meet there anymore. Honestly the new desserts are terrible. TERRIBLE!

So next week we are going to try Panera. I have never eaten there but Patti said, "The food is wonderful." And I did try a scone Patti brought my mom from Panera after her surgery and it was good. Had this wonderful orange zest after taste.

Patti & I email every day, and mom and me talk every day, but the 3 of us don't get together as much as we should.

Buttermilk PIE!

Who doesn't love a good pie? :-D

I had leftover buttermilk so I saw this recipe on one of my most favorite blogs and made it.
I was less than thrilled w/ making the pie crust, but the taste was/is wonderful!!!

The day after . . .

Did you survive all the noise & ruckus late last night?
We barely did.
Fireworks are still legal where we live and it is THE worst and only reason we dislike our town.
Comforting and protecting our fur-babies is our only concern.
Everything else is just "stuff" and we can't take it with us when we die.

During the day however we had a wonderful time at our "sons" house. :-)
His friends, neighbors and co-workers are all so nice.
And really good cooks!
I ate one of the best tuna macaroni salad
and a simply divine sweet potato cheesecake that would rival any cheesecake factory cheesecake
and I really loved Kauffman's grandmas rhubarb cake. Yum!
Oooooooooh and there were these little cheesecake bites that were covered in cinnamon. Yummy!!!! The cinnamon made the cream cheese just pop with flavor.
I am hoping to get recipes. :-)

We took a load of desserts over to my moms afterwards whom is still recovering from her surgery.

4th of July Trifle

Weeks ago I originally saw this recipe on Facebook, tagged my "son" the Kauffman in it (he loves having parties) and of course it came right back at me recently because he wanted me to make it & bring it to his 4th party. :-O

So I made the cake parts, not once but TWICE yesterday and whined & moaned almost the entire time... LOL!!!! Now I have it figured out and tweaked the recipe to fit ME! :-D

Buy 2 WHITE cake mixes (one will be coloring w/ red food coloring, the other blue)
One cake mix at a time add 3 eggs, 1 & 1/4 cup buttermilk and 1/3 cup veg oil
ONLY TO THE RED BATTER WILL YOU ADD 1 Tbs of unsweetened cocoa powder
(which makes a cheating version of red velvet cake)
TO THE BLUE BATTER ADD 1 tsp. of almond extract
Beat each for 2 minutes in your mixer
Bake each in a PAM sprayed 8" pan for about 45 min or until set. (your making 2 different cakes)
Cool then, cut outer edges off so you get the pretty color inside. Then cut into big chunks for layering.

1 pint of whipping cream & 1/2 cup sugar to peaks, set aside
Whip/Beat/Mix until fluffy
2 - 8 oz. pkgs of cream cheese, 1/2 cup sugar & 2 tsp. of vanilla
Then fold all together, thats your whipped layer.

blue chunks, cream, red chunks, cream, blue, red, then more cream then top with sliced strawberries & blueberries

Keep chilled :-)
